Why Youโ€™ll Love This

Traditional shrimp toast is mostly deep-fried white bread. Here, we lose the bread and turn the prawn topping into the โ€œtoastโ€ itself. Itโ€™s crunchy, packed with umami, and makes an incredible starter for an Asian-inspired dinner party.

Ingredients

  • 300g raw king prawns, peeled
  • 1 egg white
  • 1 spring onion, finely chopped
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tsp sesame oil
  • 60g ground almonds
  • 40g sesame seeds
  • Coconut oil or avocado oil for shallow frying
  • Soy sauce or Tamari for dipping

Method

  1. Place the prawns, egg white, spring onion, ginger, garlic, and sesame oil into a food processor. Pulse until you have a thick, slightly chunky paste.
  2. Line a small tray with parchment paper. Spread the prawn mixture into a flat square about 1.5cm thick. Freeze for 30 minutes to firm up (this makes it easier to handle).
  3. Once firm, cut the square into triangles.
  4. Place the ground almonds and sesame seeds on two separate plates.
  5. Press each prawn triangle first into the almonds to coat, then into the sesame seeds so they are well-covered.
  6. Heat about 1cm of oil in a frying pan over medium heat.
  7. Fry the triangles for 3-4 minutes per side until golden brown and the prawn is pink and cooked through.
  8. Drain on kitchen paper and serve with soy sauce and extra spring onions.

Tips & Swaps

  • For a bit of heat, add half a finely chopped red chilli to the prawn paste.
  • Easier handling. Freeze the prawn paste square for 30 minutes before cutting into triangles; this makes them much easier to handle and coat in sesame seeds.
  • You can bake these at 200ยฐC for 12-15 minutes if you prefer to avoid frying, though they wonโ€™t be quite as crisp.
