Ingredients
- 300g raw king prawns, peeled
- 1 egg white
- 1 spring onion, finely chopped
- 1 tsp fresh ginger, grated
- 1 clove garlic, minced
- 1 tsp sesame oil
- 60g ground almonds
- 40g sesame seeds
- Coconut oil or avocado oil for shallow frying
- Soy sauce or Tamari for dipping
Method
- Place the prawns, egg white, spring onion, ginger, garlic, and sesame oil into a food processor. Pulse until you have a thick, slightly chunky paste.
- Line a small tray with parchment paper. Spread the prawn mixture into a flat square about 1.5cm thick. Freeze for 30 minutes to firm up (this makes it easier to handle).
- Once firm, cut the square into triangles.
- Place the ground almonds and sesame seeds on two separate plates.
- Press each prawn triangle first into the almonds to coat, then into the sesame seeds so they are well-covered.
- Heat about 1cm of oil in a frying pan over medium heat.
- Fry the triangles for 3-4 minutes per side until golden brown and the prawn is pink and cooked through.
- Drain on kitchen paper and serve with soy sauce and extra spring onions.

- For a bit of heat, add half a finely chopped red chilli to the prawn paste.
